We came here for dinner, we’re not staying on site. The dining room is absolutely gorgeous and very nice ambience. The staff were all knowledgeable about the menu and helpful. The food is divine, absolutely. The onion butter with the bread is so luscious, the onions on the burger were exquisite and interesting, and the short rib was fall-off-the-bone splendidly tender and decadent. Funny enough, our absolute favorite item was the fried Troutlings bar snack. So unique and feels like this may be the only spot in the world you could get such an item. My only negative, and it isn’t huge, is that the cocktail program does not hold up next to the incredibly created and executed food. While good, the cocktails were fairly basic in comparison.

This spring’s Stream Tasting Menu was a perfect tribute to the Catskills—thoughtfully composed, beautifully presented, and deeply seasonal. From the trout roe and spring pea salad to the grilled brook trout with rocket flowers, every dish felt rooted in place and time. The stinging nettle and river eel stew was unexpected and unforgettable, and the hot smoked steelhead with reduced cream was a standout. The kitchen’s attention to local ingredients—from Snowdance Farm chicken to fiddlehead ferns—makes each course feel like a walk through the woods. And to end on a sorrel and marzipan ice cream with pink peppercorn mochi? Just perfect. A truly special meal, as always. Can’t wait for summer.
Apr 18, 2025 · Olivier Sentucqcame here for our belated valentines day dinner for our weekend away from the city and was genuinely surprised to find such a gem. the food was delicious and we couldn’t help ourselves but order basically the whole menu. highlights include the bread and butter (must get), grilled leeks, duck legs and broccolini. service was also great and the waiter even helped us with choosing the best route back home due to the snow ❄️

From the start, the service was attentive and thoughtful. Even before we arrived, there was excellent communication, providing everything we needed to know, and they went above and beyond to help us arrange our dinner reservations in advance. Our welcome was warm and personal (thank you, Anastasija!), complete with a delicious welcome drink awaiting us. Nestled on 600 acres, the property offers a wonderful network of trails, which we thoroughly enjoyed exploring each day. While the hotel is remote, it’s just a short 8-minute drive to Livingston Manor, where you’ll find charming shops and great lunch spots. The food is outstanding—each morning began with a generous breakfast selection, and dinner was a culinary delight. We tried the à la carte menu one night and the tasting menu the next; I highly recommend experiencing both. The Debruce is the perfect escape from New York City. The scenic drive up is easy, and once here, you truly feel off the grid—exactly what we needed. Thank you to everyone at The Debruce for making our stay so memorable. We can’t wait to return!
